  • 2 tablespoons granulated sugar
  • 8 tablespoons (1 stick) butter (melted)
  • 1 box (3.4 oz) instant lemon pudding
  • 1½ cups half and half
  • 8 ounces cream cheese (softened)
  • 1/2 cup powdered sugar
  • 16 ounces Cool Whip (thawed)
  • 1 can (21 oz) blueberry pie filling

Instructions

  1. Prepare the crust: Blend graham crackers and sugar in a food processor until fine crumbs form. Mix in melted butter and press into the bottom of a 9×13 baking pan. Freeze for 20 minutes.
  2. Make the filling: Whisk together lemon pudding and half and half; let thicken for 5 minutes. Beat cream cheese with powdered sugar until smooth, then mix in the pudding.
  3. Combine: Gently fold in one tub of Cool Whip into the cream cheese mixture, then spread over the chilled crust.
