Description

Lasagna Soup is a delightful twist on traditional lasagna, offering all the comforting flavors in a quick and easy soup form. This hearty dish combines ground beef, rich tomatoes, and flavorful spices with tender pasta to create a warm, satisfying meal perfect for busy weeknights or casual gatherings.


Ingredients

  • 12 tablespoons Olive Oil
  • 1 pound Ground Beef
  • 1 large Onion (diced)
  • 4 cloves Garlic (minced)
  • 1 (15-ounce can) Diced Tomatoes (don't drain)
  • 1 (15-ounce can) Tomato Sauce (or tomato puree)
  • 1/3 cup Tomato Paste
  • 4 cups Chicken Broth
  • 12 cups Water
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon Sea Salt
  • Black Pepper (to taste)
  • 8 ounces Bowtie Pasta (uncooked)
  • 1/2 cup Ricotta Cheese
  • 2 ounces Mozzarella Cheese (shredded)
  • 1/4 cup Parmesan Cheese (shaved, shredded, or fresh grated)
  • 1/4 cup Fresh Parsley (chopped)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onions until translucent, then add minced garlic and cook for another minute.
  2. Add ground beef to the pot and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  3. Stir in diced tomatoes (with juice), tomato sauce, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil.
  4. Add bowtie pasta to the pot and reduce heat to simmer. Cook uncovered for 10–12 minutes, or until pasta is tender.
  5. Remove from heat and stir in ricotta cheese. Serve hot, garnished with mozzarella cheese, parmesan cheese, and fresh parsley.
