  • 2 cups shredded low moisture mozzarella
  • 2 tablespoons cream cheese
  • 2 eggs
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1 tablespoon grated parmesan
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1 tablespoon olive oil

Instructions

  1. Melt mozzarella and cream cheese together until smooth.
  2. In a mixing bowl, blend melted cheeses with eggs, almond flour, and baking powder until well mixed.
  3. Refrigerate the dough for at least 4 hours.
  4. Divide chilled dough into 8 equal balls; roll each ball between parchment paper to about 1/4 inch thick.
  5. Preheat oven to 350°F (175°C). Bake flatbreads on lined baking sheets for 15 to 17 minutes until golden brown.
  6. In a small pan, heat butter and olive oil; sauté garlic until lightly browned.
