  • 1 lb ground turkey (or your choice of ground meat)
  • 4 ribs celery, diced
  • 1 red bell pepper, diced
  • 1/2 small onion, diced
  • 3 cloves garlic, minced
  • 12 oz frozen cauliflower rice
  • Assorted spices (paprika, oregano, thyme, cayenne pepper)

Instructions

  1. In a heavy-bottomed skillet over medium-high heat, add bacon grease or olive oil and ground meat. Season with salt, black pepper, and garlic powder. Cook until browned.
  2. Reduce heat to medium; add onion, celery, and bell pepper. Sauté for about 5 minutes until tender. Stir in garlic and spices; cook for another minute.
  3. Add frozen cauliflower rice and water/chicken stock. Mix well and cook until rice is soft with no excess liquid remaining.
