Ingredients

Scale
  • 4 cups water
  • 2 tbsp Kashmiri green tea (or other green tea)
  • 1/2 tsp baking soda
  • 12 star anise
  • 2 crushed cardamom pods
  • 1 cinnamon stick
  • 1/4 tsp salt
  • 2 cups whole milk
  • Sugar or honey to taste
  • Optional: crushed nuts for garnish

Instructions

  1. Boil water in a saucepan and add green tea; boil for 5 minutes.
  2. Stir in baking soda; continue boiling for 2 minutes until deep red.
  3. Add spices and boil for another minute.
  4. Reduce heat and simmer for 20-30 minutes until reduced by half.
  5. Mix in salt, then add milk and bring to a boil while stirring constantly.
  6. Once pink, strain into cups to remove spices and leaves.
  7. Sweeten to taste and garnish with crushed nuts if desired.
