Ingredients
- 2 lb thin-sliced beef (or chicken, tofu, or shrimp)
- 1 lb Korean sweet potato noodles (glass noodles)
- 3 medium carrots, julienned
- 1 large white onion, thinly sliced
- 1/2 bunch green onions, chopped
- 6 garlic cloves, minced
- 1/2 lb spinach leaves
- 4 tablespoons sesame oil (divided)
- 1 tablespoon olive oil
- 6 tablespoons soy sauce
- 3 tablespoons brown sugar
Instructions
- Cook the sweet potato noodles in boiling water for 5–6 minutes until tender. Drain and set aside.
- In a skillet over high heat, cook the beef until browned. Season with half of the soy sauce, sesame oil, and brown sugar; set aside.
- In another skillet, heat olive oil over medium-high heat. Stir-fry carrots and onion until softened. Add remaining soy sauce and sesame oil along with garlic and green onions; cook for an additional minute.
- Add fresh spinach to wilt it down. Combine cooked noodles, beef, and sautéed vegetables in a large bowl; toss to coat evenly.
- Serve warm garnished with extra green onions if desired.
