Ingredients
- 4 large baking potatoes
- 9oz (250g) cooked & chopped bacon
- 5.3oz (150g) grated cheddar cheese
- 5.3oz (150g) cream cheese
- 3 fresh jalapeños, deseeded & diced
- 2 tbsp butter
- Garlic powder, salt & black pepper to taste
Instructions
- Preheat the oven to 356°F (180°C). Prick potatoes with a fork, drizzle with olive oil, and season with salt and pepper. Bake for 60–70 minutes until golden and fork-tender.
- Once cool enough to handle, slice off the tops of the potatoes and scoop out most of the insides while leaving a thin wall.
- In a mixing bowl, combine the scooped potato flesh with cream cheese, butter, garlic powder, salt, pepper, cheddar cheese, bacon, and jalapeños.
- Stuff the mixture back into the potato skins and top with remaining cheese, bacon bits, and jalapeños. Bake at 430°F (220°C) for 15 minutes until crispy.
- Serve warm with sour cream and chives.
