Instructions

  1. Preheat your oven to 375°F (190°C) and grease an 8-inch baking dish or cast-iron skillet.
  2. Cook and mash the sweet potato until smooth; set aside to cool.
  3. In a bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  4. In another bowl, combine mashed sweet potatoes, buttermilk, melted butter, eggs, and honey until smooth.
  5. Pour the wet mixture into the dry ingredients and stir until just combined.
