Ingredients

  • 2 boneless skinless chicken breasts
  • 8 cups chicken broth
  • 2 cups water
  • 4 celery stalks (chopped)
  • 4 whole carrots (peeled and chopped)
  • 1/2 onion (diced)
  • 2 cups egg noodles
  • 1/4 teaspoon dried thyme leaves
  • 1 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 Bay Leaves

Instructions

  1. Chop all vegetables and set aside.
  2. In a large pot, combine chicken breasts, chicken broth, celery, carrots, and onions. Bring to a boil.
  3. Reduce heat and simmer until chicken is cooked through (20-30 minutes). Shred the chicken and return to the pot.
  4. Add thyme, garlic, salt, pepper, bay leaves, egg noodles, and remaining water.
  5. Cook over medium heat for about 10 minutes until noodles are tender.
  6. Remove bay leaves before serving.
