Ingredients
- 2 TBSP butter
- 1 lb bone-in chicken thighs
- 8 cups chicken stock
- 3 celery stalks (diced)
- 2 medium carrots (peeled and sliced)
- 1/2 yellow onion (diced)
- 2 cloves garlic (minced)
- 12 ounces frozen egg noodles
- 1/2 TBSP dried thyme
- 1/2 TBSP dried basil
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a large stock pot over medium heat, melt butter. Season chicken with salt and pepper, then brown on both sides for about 3 to 4 minutes.
- Remove chicken from pot; retain drippings by removing excess fat. Add diced vegetables and sauté for 3 to 4 minutes.
- Pour in chicken stock; bring to a boil. Return chicken to pot, reduce heat, and simmer for 25 to 30 minutes.
- Remove chicken again; add frozen noodles to boiling broth and cook according to package instructions (about 20 minutes).
- Shred the chicken into bite-sized pieces and return it to the pot before serving.
