  • 2 TBSP butter
  • 1 lb bone-in chicken thighs
  • 8 cups chicken stock
  • 3 celery stalks (diced)
  • 2 medium carrots (peeled and sliced)
  • 1/2 yellow onion (diced)
  • 2 cloves garlic (minced)
  • 12 ounces frozen egg noodles
  • 1/2 TBSP dried thyme
  • 1/2 TBSP dried basil
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large stock pot over medium heat, melt butter. Season chicken with salt and pepper, then brown on both sides for about 3 to 4 minutes.
  2. Remove chicken from pot; retain drippings by removing excess fat. Add diced vegetables and sauté for 3 to 4 minutes.
  3. Pour in chicken stock; bring to a boil. Return chicken to pot, reduce heat, and simmer for 25 to 30 minutes.
  4. Remove chicken again; add frozen noodles to boiling broth and cook according to package instructions (about 20 minutes).
  5. Shred the chicken into bite-sized pieces and return it to the pot before serving.
