  • 2 medium English cucumbers (about 4 cups)
  • 1 (15 oz) can chickpeas, rinsed and drained
  • 1 cup crumbled feta cheese
  • 1/2 small red onion, thinly sliced
  • 12 cloves garlic, minced
  • 1/2 cup chopped fresh herbs (parsley, cilantro, mint)
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Juice of 1/2 lemon
  • Salt and black pepper to taste

Instructions

  1. Wash and dice the cucumbers into bite-sized pieces. Place them in a large bowl.
  2. Add the rinsed chickpeas, sliced red onion, crumbled feta cheese, minced garlic, and chopped herbs to the bowl.
  3. In a separate bowl, whisk together olive oil, red wine vinegar, lemon juice, salt, and pepper.
  4. Pour the dressing over the cucumber mixture and gently toss until combined. Taste and adjust seasoning if needed.
  5. Serve immediately or refrigerate for up to four days.
