- 2 medium English cucumbers (about 4 cups)
- 1 (15 oz) can chickpeas, rinsed and drained
- 1 cup crumbled feta cheese
- 1/2 small red onion, thinly sliced
- 1–2 cloves garlic, minced
- 1/2 cup chopped fresh herbs (parsley, cilantro, mint)
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- Wash and dice the cucumbers into bite-sized pieces. Place them in a large bowl.
- Add the rinsed chickpeas, sliced red onion, crumbled feta cheese, minced garlic, and chopped herbs to the bowl.
- In a separate bowl, whisk together olive oil, red wine vinegar, lemon juice, salt, and pepper.
- Pour the dressing over the cucumber mixture and gently toss until combined. Taste and adjust seasoning if needed.
- Serve immediately or refrigerate for up to four days.
