- 24 oz salmon fillet (cut into 4 portions)
- 1 cup 2% milk
- 1 tbsp cornstarch
- 2 tbsp butter
- 1 tsp olive oil
- 2 cloves garlic (minced)
- 2 cups fresh spinach (chopped)
- 1 cup cherry tomatoes (halved)
- 1/4 cup sun-dried tomatoes
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
- Pasta of choice (Barilla protein+ recommended)
Instructions
- Preheat a nonstick pan over medium heat.
- Cut the salmon into four equal portions.
- Add olive oil to the pan and place the salmon skin-side down. Cook for 4–5 minutes per side until golden brown.
- In a separate bowl, mix cornstarch with milk until smooth. Remove salmon from the pan.
- Sauté garlic in the same pan, then add spinach, cherry tomatoes, and sun-dried tomatoes until softened.
- Pour in the milk mixture and stir until thickened before adding cooked pasta, parmesan cheese, salt, and pepper.
- Serve warm by placing pasta on plates topped with salmon.
