  • 1 red bell pepper
  • 1 yellow or orange bell pepper
  • 1 red onion
  • 1 (20 oz) can of pineapple chunks
  • 1/4 cup soy sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons pineapple juice
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine chicken cubes, bell peppers, red onion, and drained pineapple chunks.
  3. In a small bowl, whisk together soy sauce, brown sugar, reserved pineapple juice, cornstarch, garlic powder, ginger, and optional red pepper flakes.
