  • 1 3/4 cups (219 g) all purpose flour, spooned and leveled
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup (112 g) unsalted butter, softened
  • 1/2 cup (110 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 eggs, at room temperature
  • 2 tsp vanilla bean paste or extract
  • 1 tsp butter extract
  • 1/3 cup (66 g) butterscotch chips, melted and slightly cooled
  • 1/2 cup (120 ml) buttermilk, at room temperature
  • 1 cup (224 g) unsalted butter, softened (for frosting)
  • pinch of salt (for frosting)
  • 2/3 cup (133 g) butterscotch chips, melted and slightly cooled (for frosting)
  • 1 1/2 cups (195 g) powdered sugar (for frosting)
  • 1/2 tsp vanilla bean paste or extract (for frosting)
  • 1/2 tsp butter extract (for frosting)
  • gold and white nonpareil sprinkles (optional, for drizzle)
  • 1/4 cup (50 g) butterscotch chips (for drizzle)
  • 1 1/2 tbsp (22 ml) heavy cream (for drizzle)
  • 1/2 tbsp honey (for drizzle)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round baking pans.
  2. In a saucepan, reduce butterscotch beer by half over medium heat; let cool.
  3. Whisk together flour, baking powder, baking soda, and salt in one bowl.
  4. In another bowl, cream softened butter and sugars until fluffy. Add eggs one at a time along with vanilla and butter extracts.
  5. Mix in cooled butterscotch reduction and buttermilk until combined.
  6. Gradually add dry ingredients and fold in melted butterscotch chips.
  7. Pour batter into prepared pans and bake for about 29 minutes or until a toothpick comes out clean.
  8. Cool cakes on a rack before frosting.
