  • ½ pint colorful cherry tomatoes
  • 8 ounces fresh mozzarella cheese
  • Fresh basil leaves
  • ⅓ cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 2 garlic cloves
  • 2 teaspoons sugar-free maple syrup
  • 1 ½ teaspoon salt
  • ¼ teaspoon freshly cracked black pepper
  • ⅛ teaspoon red pepper flakes (optional)

Instructions

  1. Slice zucchini into ½-inch thick circles and pat dry on paper towels.
  2. Heat a grill pan over medium-high heat and brush with oil. Grill zucchini in batches for 2-3 minutes per side until charred.
  3. Season the grilled zucchini with salt.
  4. Whisk together dressing ingredients: olive oil, red wine vinegar, minced garlic, maple syrup, salt, pepper, and red pepper flakes.
