  • 1 lb large shrimp (peeled & deveined)
  • 1 tablespoon olive oil
  • 1 cup frozen corn (thawed)
  • 1 avocado (sliced or mashed)
  • 1/2 cup red onion (diced)
  • 1/4 cup cilantro (chopped)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 clove garlic (minced)

Instructions

  1. In a bowl, mix shrimp with olive oil and seasonings. Let marinate.
  2. Combine corn, red onion, jalapeño, cilantro, lime juice, and salt in another bowl for the corn salsa.
  3. Preheat grill to medium heat and cook shrimp for 2-3 minutes on each side until pink and charred.
