  • 1 teaspoon Coconut Oil
  • 3/4 cup Plain Greek Yogurt
  • 1 large Egg
  • 1/4 cup Almond Milk (or soy milk, or any milk of choice)
  • 1/2 cup Granulated Sweetener (sugar-free brown erythritol or coconut sugar or brown sugar)
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Oat Flour (or all-purpose flour lightly packed, swept)
  • 1/2 cup Unsweetened Cocoa Powder
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt

Instructions

  1. Preheat the oven to 350°F (180°C) and line an 8-inch x 8-inch brownie pan with parchment paper.
  2. Melt 1/3 cup of chocolate chips with coconut oil in a microwave-safe bowl; set aside to cool.
  3. In a separate bowl, whisk together oat flour, cocoa powder, granulated sweetener, baking powder, and salt.
  4. In another large bowl, combine Greek yogurt, egg, vanilla extract, almond milk, and cooled melted chocolate until smooth.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Fold in the remaining chocolate chips and pour the batter into the prepared pan.
  7. Bake for 20-23 minutes or until a toothpick comes out clean.
  8. Allow to cool completely before cutting into squares.
