  • â…“ cup almond flour
  • ¼ cup fresh parsley
  • 2 tsp fresh dill
  • 3 cloves garlic
  • ¼ cup feta cheese
  • ½ tbsp onion powder
  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • ½ tsp salt
  • ½ tsp freshly cracked pepper
  • Zest of 1 lemon
  • 1 tbsp extra virgin olive oil
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • Juice of 1 lemon
  • â…“ cup crumbled feta cheese
  • Fresh parsley (chopped, for garnish)
  • Salt to taste

Instructions

  1. In a mixing bowl, combine ground chicken, almond flour, parsley, dill, garlic, feta cheese, onion powder, oregano, cumin, salt, pepper, lemon zest, and olive oil. Mix until well combined.
  2. Form the mixture into 1½–2-inch meatballs and lightly salt.
  3. Heat olive oil in a skillet over medium heat. Sear meatballs for 3–4 minutes until browned; cover and cook for another 5–6 minutes until cooked through.
  4. In the same skillet, bring chicken broth to a boil and add orzo. Cook for 8–10 minutes until tender.
  5. Stir in lemon juice and olive oil into the orzo. Serve topped with meatballs and garnished with crumbled feta cheese and chopped parsley.
