- 4 boneless, skinless chicken breasts (or thighs)
- 1.5 pounds baby Yukon Gold or red potatoes
- 4 cloves garlic (minced)
- ⅓ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 4 tablespoons olive oil
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine Italian seasoning, smoked paprika, salt, black pepper, and 1 tablespoon of olive oil. Toss in chicken until well coated.
- In another bowl, toss halved potatoes with 3 tablespoons of olive oil, minced garlic, salt, black pepper, and half of the grated Parmesan until evenly coated.
- Place seasoned chicken in the center of a baking sheet; arrange potatoes around it and sprinkle remaining Parmesan on top.
- Bake for about 30 minutes or until chicken reaches 165°F (74°C) internally and potatoes are fork-tender.
- Garnish with chopped parsley before serving hot.
