Description

Garlic Parmesan Chicken and Potatoes is the ultimate one-pan dinner that combines juicy chicken with crispy, flavorful potatoes, all infused with aromatic garlic and rich Parmesan cheese. This dish is perfect for busy weeknights or any meal where you want something quick yet satisfying.


Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1.5 pounds baby Yukon Gold or red potatoes
  • 4 cloves garlic (minced)
  • ⅓ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 tablespoons olive oil
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine Italian seasoning, smoked paprika, salt, black pepper, and 1 tablespoon of olive oil. Toss in chicken until well coated.
  3. In another bowl, toss halved potatoes with 3 tablespoons of olive oil, minced garlic, salt, black pepper, and half of the grated Parmesan until evenly coated.
  4. Place seasoned chicken in the center of a baking sheet; arrange potatoes around it and sprinkle remaining Parmesan on top.
  5. Bake for about 30 minutes or until chicken reaches 165°F (74°C) internally and potatoes are fork-tender.
  6. Garnish with chopped parsley before serving hot.
