  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 3 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • 1 cup heavy cream
  • ¾ cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Cook rigatoni in a large pot of salted boiling water until al dente; reserve ½ cup pasta water before draining.
  2. In a skillet, heat olive oil over medium-high heat. Add chicken, season with salt and pepper, and cook for 5-7 minutes until golden brown. Remove and set aside.
  3. In the same skillet, melt butter, add garlic, and sauté for about 30 seconds. Pour in chicken broth and simmer for 2 minutes.
  4. Stir in heavy cream and let simmer for 3-4 minutes until slightly thickened. Mix in Parmesan cheese until smooth; adjust consistency with reserved pasta water if needed.
  5. Return chicken to skillet, add rigatoni, and mix until fully coated. Simmer together for an additional minute.
  6. Serve warm, garnished with parsley and extra Parmesan if desired.
