  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 8 ounces full-fat brick cream cheese, softened to room temperature
  • 3 tablespoons unsalted butter, softened to room temperature
  • 1 and 1/4 cups confectioners’ sugar
  • 1 teaspoon pure vanilla extract
  • 3 cups assorted sliced fresh fruit

Instructions

  1. Preheat oven to 350°F (177°C). Grease a 12-inch pizza pan.
  2. In a medium bowl, whisk together flour, cornstarch, baking powder, and salt.
  3. In a large bowl, cream softened butter and sugar until fluffy. Add egg and vanilla; mix well.
  4. Gradually add dry ingredients to wet mixture. Chill the dough for at least 20 minutes.
  5. Press dough onto the pizza pan; bake for 17-19 minutes until lightly browned. Cool completely.
  6. Beat together cream cheese and butter until smooth; gradually add confectioners’ sugar and vanilla.
  7. Spread frosting over cooled crust, then top with sliced fresh fruit.
