  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 3/4 cup granulated sugar (for filling)
  • 1/4 cup cornstarch
  • 2 and 1/2 cups all-purpose flour
  • 1 cup unsalted butter, cold & cubed
  • 1 large egg (for egg wash)
  • Pinch of salt

Instructions

  1. Prepare the cherry filling by simmering pitted cherries, lemon juice, vanilla extract, sugar, cornstarch, and salt in a saucepan over medium heat until thickened. Let cool.
  2. Preheat your oven to 425°F and butter a 9-inch pie plate.
  3. Make the pie crust by whisking flour and sugar together. Cut in cold butter until crumbly, then add cold water and knead until combined. Divide into two balls and chill for at least 30 minutes.
  4. Roll out the dough on a floured surface; fit one disc into the pie plate. Fill with cooled cherry mixture and cover with the second disc. Vent the top crust.
  5. Brush with egg wash and bake on a rimmed baking sheet for about 60 minutes or until golden brown.
