Ingredients
- 6 cups fresh cherries, pitted
- 1 tablespoon fresh lemon juice

- 2 and 1/2 cups all-purpose flour
- 1 cup unsalted butter, cold & cubed
- 1/4 cup cold water
- 1 large egg (for egg wash)
Instructions
- Prepare the cherry filling by mixing fresh cherries, lemon juice, vanilla extract, sugar, and cornstarch in a saucepan over medium heat. Simmer for about 10 minutes until thickened. Remove from heat and let cool.
- Preheat your oven to 425°F and grease a 9-inch pie plate.
- Prepare the dough by whisking together flour and sugar in a bowl. Cut in cold butter until crumbly, then add cold water gradually until combined. Divide into two balls and chill for 30 minutes.
- Roll out one ball on a floured surface into a disc larger than the pie plate; repeat with the second ball.
- Transfer one disc into the pie plate, fill with cooled cherry mixture, cover with the second disc, crimp edges to seal, and make slits in the top crust for steam to escape.
- Brush with egg wash and bake for about 60 minutes or until golden brown.
