  • 2 large sweet onions (Vidalia)
  • 6 tablespoons butter
  • 4 cups high-quality beef broth
  • ¾ cup dry white wine (Chardonnay or Pinot Grigio)
  • 1 baguette
  • 6 slices Gruyere cheese
  • Salt and pepper to taste

Instructions

  1. Slice onions into ¼-inch rings.
  2. Melt butter in a large pot over medium-low heat. Add onions, coating them evenly.
  3. Cook uncovered for up to 2 hours, stirring every 10–15 minutes until caramelized.
  4. Optional: Sprinkle flour and cook for an additional 2 minutes.
  5. Add beef broth, bouillon cube, wine, Worcestershire sauce, thyme, and bay leaves. Simmer for about 45 minutes.
  6. Preheat oven to 350°F and prepare baguette slices by brushing with olive oil and toasting until golden.
  7. Top toasted baguette slices with Gruyere cheese and broil until melted.
  8. Serve soup topped with cheesy baguettes.
