  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • 1 1/4 cups milk
  • 2 3/4 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 3 ounces red gelatin powder (Cherry or Strawberry)
  • 3 ounces blue gelatin powder (Berry)
  • 1 cup butter (for frosting, room temperature)
  • 5 cups confectioners' sugar
  • 12 tablespoons milk
  • Red and blue icing gel or food coloring

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake tray with liners.
  2. Cream together butter and sugar until fluffy. Add eggs one by one, then vanilla and milk.
  3. In another bowl, whisk flour, baking powder, and salt. Combine with wet ingredients until just mixed.
  4. Divide batter into three bowls; color one red (gelatin), leave one plain (white), and color the last blue (gelatin).
  5. Layer the colored batters in cupcake liners: blue first, then white, followed by red.
  6. Bake for 18 minutes or until a toothpick comes out clean. Cool completely before frosting.
