Ingredients
- 1/2 cup butter (room temperature)
- 2 cups granulated sugar
- 1 teaspoon pure vanilla extract
- 2 large eggs
- 1 1/4 cups milk
- 2 3/4 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1 teaspoon salt
- 3 ounces red gelatin powder (Cherry or Strawberry)
- 3 ounces blue gelatin powder (Berry)
- 1 cup butter (for frosting, room temperature)
- 5 cups confectioners' sugar
- 1–2 tablespoons milk
- Red and blue icing gel or food coloring
Instructions
- Preheat oven to 350°F (175°C) and line a cupcake tray with liners.
- Cream together butter and sugar until fluffy. Add eggs one by one, then vanilla and milk.
- In another bowl, whisk flour, baking powder, and salt. Combine with wet ingredients until just mixed.
- Divide batter into three bowls; color one red (gelatin), leave one plain (white), and color the last blue (gelatin).
- Layer the colored batters in cupcake liners: blue first, then white, followed by red.
- Bake for 18 minutes or until a toothpick comes out clean. Cool completely before frosting.
