Ingredients

  • 2 tbsp olive oil
  • 1 white onion
  • 2 medium-large carrots
  • 2 cloves of garlic
  • 250 g dried red lentils
  • 1 tin of chopped tomatoes
  • 23 large baking potatoes

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Dice the onion and carrots. In a skillet, heat olive oil and sauté for 4-5 minutes until softened.
  3. Add minced garlic and corn flour; cook for an additional 1-2 minutes.
  4. Stir in lentils, chopped tomatoes, herbs, and half of the vegetable stock. Bring to a boil, then simmer for about 15 minutes.
  5. While simmering, slice the potatoes thinly.
  6. Transfer the lentil mixture to a baking dish and layer sliced potatoes on top.
  7. Drizzle with olive oil and season. Cover with foil and bake for 30 minutes, then uncover and bake for another 20 minutes until golden brown.
