Ingredients
- 2 servings dry instant ramen noodles (or other noodles, ~140g)
- 10 oz extra firm tofu or veggies/mushrooms (sliced)
- 1 cup water or vegetable broth
- 5–7 tbsp soy sauce
- 1.5 tsp dark soy sauce (optional)
- 2–3 tbsp corn starch
- 2 tbsp rice vinegar
- 1/4 tsp ground pepper
- 1/2 tbsp chili garlic sauce
- 1 tbsp sesame oil
- Chopped scallions and sesame seeds for garnish
Instructions
- Mix all sauce ingredients in a bowl until well blended.
- Boil water in a pot; add noodles and cook until slightly chewy (about 2-3 minutes less than package instructions). Drain and rinse.
- Heat oil in a pan over medium-high heat; sauté sliced tofu or veggies until cooked to your liking.
- Pour the prepared sauce into the pan and simmer for about 2-3 minutes until slightly thickened.
- Add drained noodles to the pan; toss everything together until noodles are well coated and heated through (about 3 minutes).
- Adjust seasoning if necessary, then serve garnished with scallions and sesame seeds.
