  • 2 servings dry instant ramen noodles (140 g)
  • 10 oz extra firm tofu or veggies/mushrooms (sliced)
  • 1 cup water or vegetable broth
  • 57 tbsp soy sauce
  • 23 tbsp corn starch
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • Optional: garlic, scallions, sesame seeds for garnish

Instructions

  1. Prepare the sauce by mixing all sauce ingredients in a bowl; set aside.
  2. Boil water in a large pot and cook ramen until very chewy (2–3 minutes less than package instructions). Drain and set aside.
  3. In a non-stick skillet, sauté chosen veggies or tofu over medium-high heat until cooked.
  4. Pour the prepared sauce into the skillet, simmer for 2–3 minutes until thickened.
  5. Add drained noodles to the skillet, mix well to coat in the sauce, and cook until heated through (about 3 minutes).
  6. Adjust seasoning if needed and garnish with scallions and sesame seeds before serving.
