Ingredients
- 2 servings dry instant ramen noodles (140 g)
- 10 oz extra firm tofu or veggies/mushrooms (sliced)
- 1 cup water or vegetable broth
- 5–7 tbsp soy sauce
- 2–3 tbsp corn starch
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- Optional: garlic, scallions, sesame seeds for garnish
Instructions
- Prepare the sauce by mixing all sauce ingredients in a bowl; set aside.
- Boil water in a large pot and cook ramen until very chewy (2–3 minutes less than package instructions). Drain and set aside.
- In a non-stick skillet, sauté chosen veggies or tofu over medium-high heat until cooked.
- Pour the prepared sauce into the skillet, simmer for 2–3 minutes until thickened.
- Add drained noodles to the skillet, mix well to coat in the sauce, and cook until heated through (about 3 minutes).
- Adjust seasoning if needed and garnish with scallions and sesame seeds before serving.
