  • 1 lb ground beef
  • 1 medium yellow onion (diced)
  • 2 tsp minced garlic
  • 1/4 cup taco seasoning
  • 1 (14.5 oz) can fire-roasted diced tomatoes
  • 1 (4 oz) can green chilis
  • 1 (15 oz) can black beans (drained and rinsed)
  • 18 corn tortillas
  • 6 cups shredded cheese (Monterey jack and cheddar blend)

Instructions

  1. Preheat oven to 350°F. Coat a 9×13-inch casserole dish with non-stick spray.
  2. In a large skillet over medium heat, cook ground beef and diced onion until browned. Add minced garlic and sauté for an additional 1-2 minutes.
  3. Stir in taco seasoning and water; let simmer for a few minutes.
  4. Add fire-roasted tomatoes, green chilis, and black beans; combine well.
  5. Layer six corn tortillas on the bottom of the baking dish. Spread one-third of the meat mixture over tortillas and sprinkle with two cups of cheese. Repeat twice more, finishing with cheese on top.
  6. Cover with aluminum foil and bake for 30-40 minutes until bubbly and cheese is melted.
  7. Garnish with diced tomatoes and sliced green onions before serving.
