  • 500 g (4 cups) bread flour
  • 7 g (2 1/4 teaspoons) instant yeast
  • 2 teaspoons kosher salt
  • 480 g (2 cups) lukewarm water
  • 6 tablespoons extra-virgin olive oil (divided)
  • Flaky salt for topping
  • Optional: 1 tablespoon chopped rosemary

Instructions

  1. In a large bowl, mix bread flour, yeast, and salt. Create a well in the center.
  2. Pour lukewarm water into the well and stir until a shaggy dough forms.
  3. Drizzle 30 g olive oil over the dough and rub it in until coated. Cover with plastic wrap and refrigerate for 18 to 72 hours.
  4. When ready to bake, preheat oven to 425°F (218°C). Grease a baking pan with non-stick spray and drizzle olive oil inside.
  5. Shape refrigerated dough into a ball and place in the prepared pan. Let rise uncovered for 3-4 hours at room temperature.
  6. After rising, drizzle remaining olive oil on top, press dimples with your fingers, sprinkle flaky salt and rosemary if desired.
  7. Bake for 25-30 minutes or until golden brown. Cool before slicing.
