  • 3 pounds Russet or Yukon Gold potatoes
  • 2 cups freshly grated cheddar cheese
  • 1 cup freshly grated parmesan cheese
  • 2 cups heavy cream
  • 1 tablespoon butter
  • 3 cloves garlic (minced)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350F and prepare a greased 9×13 baking dish.
  2. Peel and slice the potatoes into 1/8-inch thick rounds using a mandoline slicer.
  3. In a small saucepan over medium heat, melt the butter and sauté the minced garlic until fragrant (about 30 seconds).
  4. Stir in heavy cream, salt, and pepper; bring to a simmer then remove from heat.
  5. Layer half of the sliced potatoes in the baking dish, pour half of the cream mixture over them, and sprinkle half of both cheeses on top. Repeat with remaining ingredients.
  6. Cover with aluminum foil and bake for 40 minutes; then remove foil and bake for an additional 25-35 minutes until tender.
  7. Let rest for 5–10 minutes before serving.
