  1. Mix the sourdough starter with warm water in a large bowl until dissolved. Stir in flour and salt until a shaggy dough forms. Cover and let rest for 30-45 minutes.
  2. Stretch and fold the dough gently on a floured countertop for about 15 seconds. Return to the bowl, cover, and let rise at room temperature for 4-12 hours until doubled.
  3. Shape the dough by folding it again, then let it rest for another 10-15 minutes. Place in a floured bowl lined with a towel or banneton, cover, and rise for 45-60 minutes.
  4. Preheat your oven to 450ºF. Transfer the dough onto parchment paper, score the top, and place it into a preheated Dutch oven.
  5. Bake covered for 30 minutes, then uncover and bake for an additional 20 minutes until golden brown.
  6. Cool on a wire rack for at least one hour before slicing.
