  • 4 boneless chicken thighs
  • 1/2 lemon (zest and juice)
  • 1/4 cup chicken broth
  • 1/2 cup Jasmine rice (uncooked)
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp crushed red pepper flakes
  • 1/4 tsp paprika
  • 1/2 tsp Italian seasoning
  • 1 clove garlic (or 1 tsp minced garlic)
  • 1/4 cup water

Instructions

  1. Place chicken thighs at the bottom of the Crock-pot.
  2. Mix lemon zest, juice, and chicken broth in a small bowl; pour over chicken.
  3. In a ramekin, combine all seasonings and sprinkle over the chicken.
  4. Add minced garlic on top.
  5. Cover and cook on high for 2-3 hours or low for 6-8 hours until tender.
  6. Twenty minutes before serving, add water and Jasmine rice to the Crock-pot.
  7. Cook covered for an additional 20 minutes until rice is tender.
  8. Serve warm, garnished with fresh parsley.
