- 1 lb ground beef (80/20 preferred)
- 2 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 cups heavy cream
- 1 cup beef broth
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 2 tbsp tomato paste
- 1 tsp Italian seasoning
- Salt and black pepper to taste
Instructions
- Cook rigatoni in a large pot of salted boiling water until al dente; drain and reserve 1 cup of pasta water.
- In a skillet, heat olive oil over medium heat. Sauté onion until softened, then add garlic.
- Brown the ground beef in the skillet, draining excess grease.
- Stir in tomato paste, Italian seasoning, salt, and pepper; cook for a few minutes.
- Add beef broth and heavy cream; simmer until sauce thickens.
- Stir in Parmesan and mozzarella until melted.
- Combine rigatoni with the sauce, adding reserved pasta water to adjust consistency.
- Serve hot, garnished with fresh parsley or basil.
