Ingredients

  • 1 lb rigatoni pasta
  • 1 lb ground beef (80/20 preferred)
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 cups heavy cream
  • 1 cup beef broth
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Cook rigatoni in a large pot of salted boiling water until al dente; drain and reserve 1 cup of pasta water.
  2. In a skillet, heat olive oil over medium heat. Sauté onion until softened, then add garlic.
  3. Brown the ground beef in the skillet, draining excess grease.
  4. Stir in tomato paste, Italian seasoning, salt, and pepper; cook for a few minutes.
  5. Add beef broth and heavy cream; simmer until sauce thickens.
  6. Stir in Parmesan and mozzarella until melted.
  7. Combine rigatoni with the sauce, adding reserved pasta water to adjust consistency.
  8. Serve hot, garnished with fresh parsley or basil.
