  • 1 small yellow onion (diced)
  • 1 jalapeño pepper (diced)
  • 3 cloves garlic (minced)
  • 1 can (15 oz) corn (drained)
  • 1 can (10 oz) Rotel diced tomatoes with green chilies (undrained)
  • 1 can (15 oz) black beans (drained and rinsed)
  • 5 cups chicken broth
  • 2 boneless skinless chicken breasts (or 2 cups shredded chicken)
  • 1½ cups shredded cheddar cheese
  • ⅓ cup cream cheese (softened)

Instructions

  1. In a large pot over medium heat, melt the butter. Add diced onions and jalapeño; sauté for about 5 minutes until softened. Stir in minced garlic and cook for another minute.
  2. Add corn, diced tomatoes, black beans, chicken broth, and chicken to the pot. Mix in taco seasoning.
  3. Bring to a gentle simmer, cover partially, and let cook for about 20-25 minutes until the chicken is cooked through.
  4. Remove the chicken from the pot and shred it using two forks before returning it to the soup.
  5. Lower heat and gradually stir in cheddar cheese and cream cheese until melted and smooth.
