  • 3-pound head of cauliflower, cut into large florets
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 3/4 cup grated Gruyère cheese
  • 1/2 cup grated parmesan cheese
  • Fresh thyme, salt, pepper, and nutmeg

Instructions

  1. Preheat oven to 375°F. Steam or boil cauliflower in salted water for about 5-6 minutes; drain well.
  2. In a medium saucepan, melt butter over medium heat. Whisk in flour until golden brown.
  3. Gradually add warm milk while whisking until thickened. Stir in thyme, nutmeg, salt, and pepper.
  4. Off the heat, mix in parmesan and half of the Gruyère until melted.
  5. In a greased casserole dish, layer cheese sauce and cooked cauliflower. Top with remaining sauce, breadcrumbs, and cheese.
