  • 1 large tomato, diced
  • 1 large bell pepper, diced

  • 1 cup canned corn kernels, drained
  • 1 cup canned black beans, drained and rinsed
  • For the dressing: olive oil, lime juice, honey (or maple syrup), chipotle powder, cumin powder, sea salt, and black pepper.

Instructions

  3. In a large bowl, mix together the cooked orzo, black beans, corn kernels, diced bell peppers, tomatoes, and red onion.
