  • 1 cup baby spinach
  • 1/2 cup sun-dried tomatoes (dry)

  • Dried oregano
  • 1/3 cup grated cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C) and spray a 12-inch pie plate skillet with olive oil.
  2. Chop the baby spinach and set aside.
  3. In a mixing bowl, whisk together eggs, cottage cheese, feta cheese, grated cheddar cheese, salt, pepper, garlic powder, and oregano until well combined.
  4. Stir in chopped spinach and sun-dried tomato strips.
  5. Pour the mixture into the prepared skillet.
