  • 4 ribs celery (finely diced)
  • 1 green bell pepper (finely diced)
  • 1 red bell pepper (finely diced)
  • ½ cup red onion (finely diced)
  • 2 hard-boiled eggs (chopped)
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon red wine vinegar
  • ½ teaspoon dill pickle juice
  • 2 teaspoons granulated white sugar
  • Salt and black pepper to taste

Instructions

  1. Cook elbow macaroni according to package instructions. Drain and rinse under cold water; set aside to cool.
  2. While pasta cools, finely dice celery, bell peppers, red onion, and chop hard-boiled eggs.
  3. In a large mixing bowl, combine cooled pasta, diced vegetables, and chopped eggs.
  4. In a small bowl, whisk together mayonnaise, Dijon mustard, red wine vinegar, dill pickle juice, sugar, salt, and black pepper until smooth.
  5. Pour dressing over the pasta mixture and gently toss to coat evenly.
