- 4 tbsp melted vegan butter
- 3/4 cup maple syrup
- 1 cup unsweetened almond or oat milk
- 1 1/2 cups all-purpose flour (regular or gluten-free)
- 1 cup old-fashioned rolled oats
- 4 tbsp melted vegan butter (for swirl)
- 1/3 cup light brown sugar
- 2 tbsp cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, combine mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract.
- In another bowl, whisk together baking powder, baking soda, cinnamon, salt, flour, and oats.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Prepare the cinnamon swirl by mixing melted vegan butter, brown sugar, and cinnamon in a small bowl.
- Pour half of the batter into the loaf pan; drizzle half of the cinnamon mixture on top. Repeat with remaining batter and swirl.
- Bake for about 45 minutes or until a toothpick comes out clean.
