Description

Cilantro Lime Noodles are a vibrant and refreshing dish that combines the zesty flavors of lime and cilantro with a hint of spice, making it an ideal choice for busy weeknights or casual gatherings.


Ingredients

  • 5.2 oz dry noodles (2 servings)
  • 1/2 cup chopped fresh cilantro
  • 3 cloves garlic (minced)
  • 1/2 small shallot (or red onion)
  • 1 tbsp sugar
  • 1 tsp curry powder
  • 1/2 tbsp chili powder (optional)
  • 1/4 cup oil (olive oil recommended)
  • 1.5 to 2 tbsp vegetarian mushroom oyster sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp lime juice

Instructions

  1. Cook the noodles until slightly undercooked, then rinse under cold water.
  2. In a large bowl, mix cilantro, garlic, shallot, curry powder, sugar, and chili powder.
  3. Heat oil in a pot until bubbling; test with garlic.
  4. Pour hot oil over the cilantro mixture and stir well.
  5. Add vegetarian mushroom oyster sauce, soy sauce, and lime juice to the bowl.
  6. Toss in the cooked noodles until coated evenly.
  7. Serve immediately with optional chili oil for extra spice.
