  • 5.2 oz dry noodles (your choice)
  • 1/2 cup chopped fresh cilantro
  • 3 cloves garlic (minced)
  • 1/2 small shallot (or red onion)
  • 1 tbsp sugar
  • 1 tsp curry powder
  • 1/2 tbsp chili powder (optional)
  • 1/4 cup olive oil
  • 1.5 to 2 tbsp vegetarian mushroom oyster sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp lime juice

Instructions

  1. Cook the noodles according to package instructions until slightly undercooked; rinse under cold water and set aside.
  2. In a large heatproof bowl, mix chopped cilantro, minced garlic, sliced shallot, curry powder, sugar, and optional chili powder.
  3. Heat oil in a pot over medium heat until bubbling; test with a piece of garlic.
  4. Pour hot oil over the cilantro mixture and stir thoroughly.
  5. Add vegetarian mushroom oyster sauce, dark soy sauce, and lime juice; mix well.
  6. Toss in the cooked noodles until they are evenly coated.
  7. Serve immediately and enjoy! Optional: top with chili oil for extra flavor.
