- 3 cloves garlic (minced)
- 1/2 small shallot (or red onion)
- 1 tbsp sugar
- 1 tsp curry powder
- 1/2 tbsp chili powder (optional)
- 1/4 cup olive oil
- 1.5 to 2 tbsp vegetarian mushroom oyster sauce
- 1 tbsp dark soy sauce
- 2 tbsp lime juice
Instructions
- Cook the noodles according to package instructions until slightly undercooked; rinse under cold water and set aside.
- In a large heatproof bowl, mix chopped cilantro, minced garlic, sliced shallot, curry powder, sugar, and optional chili powder.
- Heat oil in a pot over medium heat until bubbling; test with a piece of garlic.
- Pour hot oil over the cilantro mixture and stir thoroughly.
- Add vegetarian mushroom oyster sauce, dark soy sauce, and lime juice; mix well.
- Toss in the cooked noodles until they are evenly coated.
- Serve immediately and enjoy! Optional: top with chili oil for extra flavor.
