  • 1/4 cup granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla bean paste or extract
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy whipping cream
  • nonpareils for sprinkling on top (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, cocoa powder, salt, and baking powder.
  3. In another bowl, cream softened butter with light brown and granulated sugars until fluffy.
  4. Add egg yolks and vanilla; blend well.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Scoop dough into 1-inch balls and place on the prepared baking sheet.
  7. Create indents in the center of each ball using your thumb.
  8. Bake for about 10 minutes; allow cooling briefly before transferring to a wire rack.
  9. For ganache, heat heavy cream and pour over chocolate chips; stir until smooth, then fill each cookie's thumbprint.
