  • 1/2 cup water
  • 4 egg whites
  • Pinch cream of tartar
  • 3 tablespoons plus 1 teaspoon granulated sugar
  • 2 egg yolks
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly spray ramekins with cooking spray and dust with optional granulated sugar.
  3. In a mixing bowl, combine powdered sugar, cocoa powder, and flour.
  4. In another bowl, whisk together low-fat milk, water, egg yolks, and vanilla until smooth.
  5. Gradually mix the wet ingredients into the dry ingredients until fully incorporated.
  6. Beat egg whites with cream of tartar until soft peaks form; gradually add granulated sugar until stiff peaks form.
  7. Gently fold one-third of the whipped egg whites into the chocolate batter; then fold in the remaining egg whites until just combined.
  8. Spoon mixture into ramekins about three-quarters full and bake for approximately 20 minutes until risen and set on top.
  9. Serve immediately, dusted with powdered sugar.
