  • 1 medium onion, diced
  • 14.5 oz diced tomatoes (canned, undrained)
  • 1/2 cup water
  • 2 tbsp taco seasoning
  • 16 oz elbow macaroni
  • 2 cups shredded cheddar cheese (divided)

Instructions

  1. Cook elbow macaroni according to package directions until al dente. Drain and set aside.
  2. In a large skillet, brown ground beef and diced onion over medium heat until the beef is no longer pink. Drain excess fat.
  3. Add diced tomatoes, water, and taco seasoning to the skillet. Stir well and let simmer for about 5 minutes.
  4. Combine the meat mixture with the cooked pasta in a large bowl.
  5. Layer half of the pasta mixture in a greased 13×9 inch baking dish; sprinkle with one cup of shredded cheese. Top with the remaining meat mixture.
  6. Cover with foil and bake at 350°F (175°C) for 30 minutes. Remove foil, add remaining cheese on top, and bake uncovered for an additional 10 minutes until melted.
