  • 2 tbsp olive oil
  • 1 1/2 lb chicken breast
  • 12 oz gluten-free farfalle pasta
  • 4 tbsp butter
  • 3 cups heavy cream
  • 12 oz shredded Parmesan cheese
  • 1 1/2 tsp paprika
  • 1 1/2 tsp oregano
  • 1 tsp garlic powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 tsp dry shallots
  • 2 tsp Italian seasoning
  • 1/2 cup chicken broth
  • 2 tbsp gluten-free 1:1 flour
  • 1/4 cup pasta water
  • 1/2 tsp salt
  • 1 tsp garlic powder

Instructions

  1. Boil water in a large pot; cook farfalle pasta until al dente. Drain and set aside.
  2. In a small bowl, combine paprika, oregano, garlic powder, thyme, salt, and black pepper.
  3. Season chicken breasts with the spice mixture and pound slightly to thin.
  4. Heat olive oil in a skillet over medium heat; sear chicken for about 5 minutes on each side until golden brown.
  5. Lower the heat; cover and cook for an additional 10-12 minutes until cooked through (165°F). Remove from skillet and slice.
  6. In the same skillet, melt butter; add dry shallots and garlic powder; stir for one minute.
  7. Stir in gluten-free flour; gradually add chicken broth and heavy cream while whisking until smooth.
  8. Mix in shredded Parmesan until melted; add cooked pasta and toss to coat well.
  9. Serve pasta topped with sliced chicken.
