  • 2 tablespoons sesame oil (or vegetable oil)
  • ½ cup onion (diced)
  • ½ cup carrots (diced)
  • ½ cup frozen peas
  • 2 eggs
  • 3 cups cooked white rice
  • 2 cups cooked chicken (shredded)
  • 3 tablespoons soy sauce
  • 1 tablespoon butter
  • Salt and pepper to taste

Instructions

  1. Heat a large frying pan or wok over medium heat. Add sesame oil, onions, and carrots; sauté until onions are translucent.
  2. Stir in frozen peas; cook until heated through.
  3. In a small bowl, beat the eggs. Push vegetables to one side of the pan and scramble eggs on the other side until fully cooked; mix them with the vegetables.
  4. Add cooked rice and shredded chicken; stir well to combine.
  5. Pour in soy sauce and stir thoroughly to coat all ingredients.
  6. Add butter; stir until melted for added richness.
  7. Season with salt and pepper to taste.
