  • 2 tablespoons olive oil
  • 1 yellow onion, halved and thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 1/4 pounds boneless skinless chicken breasts, thinly sliced
  • 1 1/2 teaspoons Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Kosher salt and fresh ground black pepper to taste
  • 1 cup shredded provolone cheese

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sauté sliced onions and peppers until tender. Remove and set aside.
  2. Add the remaining olive oil and sliced chicken to the skillet along with Italian seasoning, smoked paprika, salt, and pepper. Cook until browned.
  3. Return the sautéed vegetables to the skillet, mixing well.
  4. Top with shredded provolone cheese and cover until melted.
  5. Serve hot as desired.
