- 2 boneless skinless chicken breasts (or 2 cups diced rotisserie chicken)
- 2½ cups chicken broth
- 1¼ cups white long-grain rice (uncooked)
- 2 cups fresh broccoli florets
- 10.5 oz condensed cream of chicken soup
- ½ cup milk
- ½ cup sour cream
- 2 cups shredded cheddar cheese (divided)
- 1 cup crushed Ritz crackers
- 2 tbsp melted butter
Instructions
- Preheat oven to 350°F (175°C).
- In a large pot over medium heat, melt butter and cook seasoned chicken until no longer pink.
- Stir in chicken broth, olive oil, rice, and broccoli. Add cream of chicken soup, milk, sour cream, and half of the cheddar cheese; mix well.
- Pour into a greased baking dish and top with remaining cheese and crushed Ritz crackers mixed with melted butter.
- Cover with foil and bake for 30 minutes; remove foil and bake for another 20 minutes or until golden brown.
