  • 2 boneless skinless chicken breasts (or 2 cups diced rotisserie chicken)
  • 2½ cups chicken broth
  • 1¼ cups white long-grain rice (uncooked)
  • 2 cups fresh broccoli florets
  • 10.5 oz condensed cream of chicken soup
  • ½ cup milk
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup crushed Ritz crackers
  • 2 tbsp melted butter

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large pot over medium heat, melt butter and cook seasoned chicken until no longer pink.
  3. Stir in chicken broth, olive oil, rice, and broccoli. Add cream of chicken soup, milk, sour cream, and half of the cheddar cheese; mix well.
  4. Pour into a greased baking dish and top with remaining cheese and crushed Ritz crackers mixed with melted butter.
  5. Cover with foil and bake for 30 minutes; remove foil and bake for another 20 minutes or until golden brown.
