  • 2 boneless skinless chicken breasts or 2 cups diced rotisserie chicken
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2½ cups chicken broth
  • 1 tbsp olive oil
  • 1¼ cups white long-grain rice (uncooked)
  • 2 cups fresh broccoli florets (or thawed frozen broccoli)
  • 10.5 oz condensed cream of chicken soup
  • ½ cup milk
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup crushed Ritz crackers

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot over medium heat, melt butter and olive oil together, then add chicken and seasonings. Cook until chicken is browned.
  3. Stir in rice and pour in chicken broth. Add broccoli, soup, milk, sour cream, and one cup of cheddar cheese; mix well.
  4. Transfer to a greased baking dish. Top with remaining cheese and crushed crackers mixed with melted butter.
  5. Bake for about 50 minutes or until bubbly.
