- 2 boneless skinless chicken breasts or 2 cups diced rotisserie chicken

- 2½ cups chicken broth
- 1 tbsp olive oil
- 1¼ cups white long-grain rice (uncooked)
- 2 cups fresh broccoli florets (or thawed frozen broccoli)
- 10.5 oz condensed cream of chicken soup
- ½ cup milk
- ½ cup sour cream
- 2 cups shredded cheddar cheese (divided)
- 1 cup crushed Ritz crackers
Instructions
- Preheat your oven to 350°F (175°C).
- In a large pot over medium heat, melt butter and olive oil together, then add chicken and seasonings. Cook until chicken is browned.
- Stir in rice and pour in chicken broth. Add broccoli, soup, milk, sour cream, and one cup of cheddar cheese; mix well.
